Avocado Chicken Salad


{April 17, 2013}--I have personally tried this recipe...DELICIOUS!  Served cold it is a refreshing summer lunch; it can be used for a sandwich or enjoyed by itself. 


1 package boneless, skinless chicken breasts (2 or 3)--*to simplify and save time, I used a rotisserie chicken from the local grocery store.  I just removed and shredded the meat. 
1 avocado
1/4 of an onion, chopped--*I used green onion.
Juice of 1/2 a lime
2 Tbsp cilantro

Handful of chopped celery

Handful of green grapes, sliced in half
some salt and pepper, to taste


*you can also add a little mayo or MiracleWhip if you like a little more “sauce” to your chicken salad

Cook chicken breast until done, let cool, and then shred. Add all of the other ingredients and mix.  Refrigerate before serving.
